Chromatography technology is essentially a physical and chemical separation method, which means that when two phases are in relative motion, different substances have different distribution coefficients (or adsorption coefficients) in the two phases (stationary phase and mobile phase), and the separation of each substance is achieved through continuous distribution (i.e., multiple cycles of dissolution, volatilization, adsorption, and desorption of components between the two phases). Chromatography technology has developed maturely, with advantages such as high detection sensitivity, high separation efficiency, high selectivity, low detection limit, small sample dosage, and convenience and speed. It has been widely used in safety testing of the food industry. The commonly used methods in chromatography include gas chromatography, high-performance liquid chromatography, thin layer chromatography, and immunoaffinity chromatography.
